Apples Galore

I made this recipe for the second time over the weekend and had to share it since it’s sooo good! I found the recipe on Martha Stewart’s website. I was looking for new recipes to try with all the apples I had from apple picking. The recipe is for Apple-Maple French Toast. I haven’t had French Toast in forever and when I found the recipe I couldn’t wait to try it. The recipe was easy and super tasty (and helped to slowly decrease the large pile of apples on my kitchen table!!)

Apple-Maple French Toast

  • 6 eggs

  • 1 cup milk

  • 1/2 teaspoon vanilla extract

  • Ground cinnamon

  • 6 slices of bread

  • 2 tablespoons butter, plus more for serving

  • 3 apples, peeled and sliced

  • 2 tablespoons water

  • 1/2 cup maple syrup

Whisk the eggs, milk, vanilla, and a pinch of ground cinnamon in a 9-by-13-inch baking dish. Add the bread in a single layer, turning until all the egg is absorbed.  (I like to use the Pepridge Farm Homestyle White Bread.)

Meanwhile, heat a large skillet over medium heat, melt 1 tablespoon butter, and add apples, stirring to coat until starting to caramelize. Add the water, cooking until water has evaporated and apples are tender, about 4 minutes

Pour in the maple syrup (I like to splurge and get a good quality syrup..it makes a big difference!) and a dash of ground cinnamon; simmer for a minute to combine.In a large, heated nonstick skillet, melt about 1 tablespoon butter and saute the soaked bread until golden brown on each side, about 4 minutes. Place French toast on a plate and top with apple-maple mixture, plus more butter if you’d like!

This recipe is sure to be a family favorite!!  I was so impressed with this recipe I went back on Martha’s site to find some more apple recipes to try.  I came up with two more that were equally delicious.  I highly recommend the Apple-Butternut Squash Soup (that got even better as it sat in the fridge and became my lunch leftovers…) and the Apple Cup Cakes  (that I decided not to frost and eat as a breakfast treat!!)
